The New Food Cart Pod Near Cornell and Bethany Boulevard

2026-10-02 6 min read Paul Knighton & Chris Hayes

A new food-cart lot in the neighborhood

A food cart pod opened near the Cornell Road and Bethany Boulevard corner, and it is worth knowing about for anyone who lives, works or house-hunts on this corridor. It sits in the parking lot behind the Xplore indoor play center, and it gives the area something it did not have before: a daily, walk-up row of food carts right in the neighborhood.

Everything below comes from the local reporting and the pod's own channels, and we flag the details that are still settling.

Where it is

The pod is at Xplore (XplorePDX), 16365 NW Twin Oaks Drive, in the lot off NW Twin Oaks, just west of Bethany Court and south of Cornell Road, behind the Xplore indoor play center, the former Monkey King play space.

It is a short stop from Bethany Village and easy to reach from the Cornell corridor, which makes it a natural add-on to an errands loop or a family outing.

What is on the menu

The cart lineup leans into variety. As of the local reporting, the open carts included Coastal Vibes Fish & Chowder Co., Shawarma Express, Winner Javanese, Chin's BBQ, Pacific Blends Hawaiian BBQ, Singhe is King Smashburgers, Chopstix Grill Vietnamese Streetfood, Hibachi, Dhaba Indian Kitchen, Fat Monkey Schnitzel and East Coast Eddies Philly Cheesesteak, with room for a few more carts.

So the range runs from smashburgers and cheesesteaks to Vietnamese street food, Indian kitchen dishes and Hawaiian BBQ, a genuinely useful spread for a neighborhood that likes options at one stop.

Hours and what is next

The carts were reported open daily, roughly 10:00 a.m. to 8:00 p.m., with the play center itself open a bit later. The pod's plans also include an indoor bar with around 30 taps and an outdoor beer cart, which would make it more of an evening gathering spot.

Hours and the exact cart lineup do change as vendors come and go, so confirm on the day before you plan a visit around a specific cart.

The honest note

We are reporting what the local news and the pod's own channels say, not vouching for every cart's menu or hours. Food cart pods are fluid by nature, and a cart that is open this week can change next month.

If you try it and a favorite cart is gone, that is normal. The pod itself is the real and durable part of the story.

Make it part of a fall day

A food pod fits neatly into the fall routine we recommend on this corridor: coffee and a pastry in Cedar Mill, a walk around Bethany Lake Park, and an easy lunch or dinner at the pod on the way back.

If you are new to the area, ask us for the current word on the pod and the rest of the dining scene. We live this corridor every week and we like recommending it.
