Insomnia Coffee Co (Cedar Mill)
A Pacific Northwest coffee roaster with a relaxed corner spot on the Cedar Mill side of the corridor. A good pour-over stop for the Bethany school run.
Insomnia is a homegrown Northwest roaster with a handful of shops around the metro, and the Cedar Mill outpost lands right on the Cornell Road corridor between Bethany and the Sunset Highway. It is the serious coffee answer in this part of 97229: espresso drinks, pour-overs and beans to take home.
We send house-hunters here for two reasons. It is an easy, parking-friendly stop after a walk-through, and the counter is a good place to sit with a phone and compare notes on the neighborhoods you have just seen.
